Dear crew at Nobles Restaurant, a few months back a colleague booked a table for us and our ladies at your fine restaurant and as a keen cook and a firm believer in very-well executed but not too elaborate food I was anticipating quite an experience.

Sure enough, absolutely nothing disappointed. Neither from a cooking, nor from service, nor from a business perspective. I often find one aspect in a restaurant, never before all three.

The staff was warm and accommodating, though neither too friendly and casual nor too stiff and cold. I noted how when inquired, they'd answer frankly and be relaxed, without being pushy or invasive. They also showed good knowledge of the menu, meaning you took the time to talk it over with them and give them samples. I always ask the waiter for a suggestion, as a ploy to see if they'll care at all or try and be sly and push the expensive plate. Yours did neither and their criticism was accurate and not something they'd been told to say.

The business was impressive; I noted how you offer catering with your (nice and large) business card along with the bill. An excellent move, and so is the tea you serve between the usually slow time between meals. If I was looking for a way to improve the business end of your operation, I thought, I'd do some more promotion... Then I remembered we came because my colleague read of a promotional discount in a newspaper! Excellent job.

And what is there to say about the food? I had the tuna tartare which was immaculately done, even if the crab risotto was what whet my appetite. I was so amazed by everything else I wanted to see how you'd interpret this dish, and technically it was excellent. Presentation was good and the flavours worked together. I was then totally blown away with the medium steak you produced; personally, I source my own beef with particular rigour and I'm quite meticulous about the physical and chemical aspects of cookery. My beef has been praised by all whom I've fed, yet first time in my life (and we do like to eat out well quite a bit) I had a steak which I couldn't do better myself. Even the roast red pepper and red onion was done better than I could; There is nothing I can say about the hand-cut chips. I have no idea how you processed them to get a buttery, almost fluffy mash interior matted to a crunchy, crispy seasoned exterior with no sign of oil soak anywhere. I can only guess some kind of multiple cooking.

I'm not much for sweets, but those put a cap on the best meal I've paid for in my life. I've been fed in several Michelin one-star restaurants, but yours tops the lot. I spent the rest of the day wondering "If I owned that restaurant what would I do to improve it?" and I couldn't think of a single thing. Decoration, decorum, staff, menu size, cooking skill, presentation, mood, tea, catering... Bravo, team Nobles.

Yet again, Nobles in Battle did not disappoint us. The food was fantastic. We used the dinner offer (2 courses for £15) which was great value. It was a shame the restaurant was so quiet - more people should head to this lovely venue.

You won through with efficient organisation, serving our 23 diners promptly as well as looking after other customers in the front of the restaurant. We all enjoyed the meal very much, Paul's food was first class and of course amazing value. I am sure we will all be recommending Noble's to friends and relatives and many of us will be returning again ourselves.

Just wanted to drop you a line re our visit to Nobles on Saturday. Sorry for the delay but this is my first day in work since the weekend.

We had a fantastic time and mum really enjoyed herself which was the main goal! Thanks so much for decorating the table - it was a lovely touch and for being so accommodating of our requests. Janni was lovely and she and your other staff couldn't have been more attentive. Everyone raved about their food which looked and tasted great and came out in a very timely fashion. And I know a number of the guests will definitely be coming back, myself included!

Great restaurant. A tardis from the outside. Had a superb light meal of ham risotto, plaice and apricot and a very reasonable house rose wine. The service was very relaxed and informal, a little bit too fast, so we asked for a it more time between courses! Obviously very popular as it was almost full when we arrived and remained so throughout.

Would definately book again.

Took eight people to Nobles Restaurant in Battle East Sussex, whilst it was quiet the service was attentive without being overpowering and food was very good and everyone was served together and it all was piping hot! We appreciated the chef/owner coming out at the end of our meal to check that we had enjoyed the experience. Well worth another visit and it's definately the best restaurant in Battle.

Food was lovely, our steak was cooked to perfection. We switched our order a couple of times which was no trouble at all. Very friendly and obliging staff. If I had to critisise anything at all, I think it would be the decor, it was modern but a little bland.....I would gladly eat there again.

We enjoyed very much our lunch at Nobles in Battle East Sussex. The fixed menu at the aptly priced £10.66 although limited was unusual and very well cooked. The house wine also was a very good french merlot and keenly priced. I would definitely recommend this restaurant and great value.

Thanks so much for a wonderful Saturday night. ALL of my family were so impressed with your restaurant and the food. Even the 'picky ones', were bowled over.

My brother, who lives in Paris, so eats very well most of the time, thought the food was superb, and it was. Thank you for putting up with the cranky calls and menu changes and smiling with good grace through it all, you will go to restaurant heaven one day.

I did thank Debbie on the evening and Malcolm, whose care attention to us was excellent.

By the way the chocolate mousse was excellent, or in the words of my French sister-in-law, it was orgasmic! (sorry, hope I didn't offend).

I highly recommend this restaurant. It's beautiful, the service is good and the food is excellent. I commend the chef for using RSPCA Freedom Food (higher animal welfare) approved salmon (I had this dish for this reason) and free range meat. And of course for creating delicious food! It might cost a little more than your bog standard restaurant/pub but it is well worth it and taking in the quality of the food and experience, well worth it. A gem!

Nobles Restaurant is a joyous surprise behind a very low-key entrance straight on to Battle High Street. Ambiance, service and ability to deal with customers are first rate, but any restaurant stands or falls by the food on the plate. And here Nobles scores very highly. The ingredients are first rate, local where possible, eg beef from local Sussex herds, and seasonal without wearing a hair-shirt, eg a splendid blood orange sorbet. They are cooked to perfection and with imagination, but without over elaboration. The bottom line is Nobles food tastes original and great and it is backed up by an excellent wine list and a professionalism that can deal with any minor problems, eg a corked bottle of wine, quickly replaced without fuss. We had a splendid and thoroughly enjoyable evening there and will return soon.

We dined at your restaurant on the above evening and LOVED the experience The food was to die for, the service was above and beyond being excellent, the surroundings were sublime. We came to Battle for one night in order to experience the history, and were lucky to get your last table for two. Wonderful broccolli soup and a three salmon starter which included a salmon scotch egg--you need to try it to believe it's gorgeousness!! Cod and lamb mailn courses--yum yum yum..................................and the white choc and passion fruit brulee----------WOW!!! Service beyond attentiveness--------------chef came out to speak with his guests...Every good wish to you both--we will come back soon to Battle-not for the history--but to come to your wonderful restaurant!
